Mexican Night

In this blog entry I'm going to lay out how I will generally present most posts. So to start off, this evening I had a chicken quesadilla from Mabee. The Mexican food station makes a pretty good quesadilla because they pan fry their tortillas therefore giving them a crispy texture. Unfortunately their tacos don't compare to those of Tomatillos Cafe y Cantina, but if you find yourself craving tacos...the all-day breakfast station to the right of the pasta bar has good accoutrement for a decent breakfast taco. Back to my quesadilla...I decided to get chicken instead of steak because I was in the mood for a large quesadilla (as opposed to a 2-piece) and generally steak is a heartier, thicker meat which is more filling in the stomach and would therefore be almost too much to consume comfortably in a 4-piece 'dilla. My quesadilla also included, of course cheese, lettuce and guacamole. Remember to ask for the lettuce and guacamole to be added toward the end of the cooking process as to not dry up/heat the vegetables. If you are like me and don't want the beans in the inside of the quesadilla, you are probably smarter. Rice is essential in a Mexican dish, but unfortunately Mabee's Mexican rice is relatively dry. Therefore, you can mix the rice with some refried beans. Refried beans give good moisture to the seared rice. Another must have for a Mexican dish is salsa. The Mexican station offers 2 salsas...the basic tomato/onion/jalapeno/chili pepper salsa, and then there is a "spicy spicy pineapple salsa." I had to take the latter. A refreshing drink to have with a spicier Mexican dish is water. People underestimate the refreshing nature of a drink of a cold, purified spring water. Because this was a larger dish I didn't get anything to eat for dessert.
All in all I would give the meal a 6/10.
